It’s always a challenge to use eggplant raw. This dish was part of our opening tasting menu at M.A.K.E., and I think it is my favorite so far. —SW

There are a number of ways to create infusions, from the simplest method like this recipe, to making them in the Ultrasonic Homogenizer, which we have safely tucked away in Plantlab. These infusions are great to have in any active kitchen where a splash or a few drops of this or that can add depth to a very simply flavored dish. —MK
